Cheater Chili

This has been a favorite and quick go-to meal for our meatless Wednesdays and Fridays. 3/4 of the solid-food eating people in the house will eat it, and I call that success! Nothing fancy here, but it works well for us. It's cheater because I don't cook the beans myself.

 Saute in oil of your choice, until tender, 1 onion and 1 bell pepper chopped or diced

Add:
2 cans of black beans with liquid
2 cans of white beans with liquid
1 can of diced and fire roasted tomatoes or 1 small can/jar of tomato paste
1 C-ish frozen corn (roasted corn is yummy, too)
sliced olives optional

Spices-- I just do a shake of this and that, and season to taste
cumin
garlic salt
smoked paprika
red chili flakes
chili powder
thyme
salt
pepper

Simmer for 10-15 minutes

Left overs are yummy with sour cream, cheddar cheese and/or meat (smoked pulled pork is a favorite).

Now I need to gather a few more easy meatless 1 pot dishes. What are some of your favorites?
